How to make Papad ki Sabzi : You must have eaten papad-tilori with rice and dal, but have you heard about papad ki jholadar sabzi? Actually, this is such a great vegetable that is made from papad. Shahi paneer or korma tastes pale in comparison to this amazing vegetable. The special thing is that if the children of the house make faces on seeing the vegetable, then they will also eat this vegetable with great gusto. To make this, neither you will have to cut the vegetables nor you will have to sweat standing in front of the stove for hours. So what are you waiting for, let’s know the method of making this spicy vegetable.
Simple way to make papad ki sabzi-
Material:
Papad – 4-5 (fried)
Curd – 1 cup (whipped)
Gram flour – 2 tablespoons
Tomatoes – 2 (chopped)
Green chillies – 2-3 (chopped)
Ginger-garlic paste – 1 teaspoon
Cumin seeds – 1 teaspoon
Asafoetida – 1 pinch
Turmeric powder – 1/2 teaspoon
Red chilli powder – 1 teaspoon
Coriander powder – 1 teaspoon
Garam masala – 1/2 tsp
Salt – as per taste
Oil- 2 tbsp
Green coriander – for garnishing
Method:
First of all, break the papad into two-inch pieces and mix the gram flour in curd and whisk it well. Now keep it aside.
-Now heat oil in a pan and add cumin seeds and asafoetida. When the cumin seeds start crackling, add ginger-garlic paste and green chillies and fry them.
-Now add chopped tomatoes to this masala and cook it till it becomes soft. Add turmeric, red chili powder, coriander powder and salt and mix well and fry it.
-When the masala is roasted well, add the beaten curd and gram flour mixture to it. Cook it while stirring continuously so that the curd does not curdle. Turn off the gas before adding curd.
-Now put the gas on medium flame and cook this mixture for 5 minutes. Slowly the gravy will start thickening.

-Now add fried papad pieces to this gravy and mix gently. Make sure that the papad does not break. Now add garam masala to it and mix.
-The vegetable is ready. Now finely chop the coriander leaves and garnish the curry with it. Now serve hot papad ki sabzi with rice, paratha or roti. You can use Kashmiri chilli to improve the colour.
