This jaggery, made from sugarcane, is considered a healthy sweetener. It is made of 20 percent inverted sugar, 50 percent sucrose and 20 percent moisture and many types of soluble substances. Jaggery is rich in calcium, phosphorus, iron, potassium and zinc, protein and vitamin B.

Calcium carbonate increases the weight of jaggery, while adding sodium bicarbonate improves the color of jaggery. Apart from this, sugar and a chemical called sepholite are mixed in jaggery. That means, if you eat adulterated jaggery then it can cause more harm than good. Adulterated jaggery is darker brown than real jaggery. Whereas real jaggery is light yellow or brown in colour. Real jaggery looks shiny and very clean.

Identify by heating – When jaggery is heated in a pan, real jaggery turns into liquid. It will be sticky and a little thick. Whereas adulterated jaggery will flow like water. In this way real and adulterated jaggery can be identified.
