Consuming baby carrots three times a week increases the carotenoid levels in the skin and improves skin health.
Carrots are known to be great for vision. However, a recent study suggests that baby carrots may do much more than that. The study, led by Mary Harper Simmons of Samford University, suggests that baby carrots may be the answer to great glowing skin.

The study was presented at the Nutrition 2024 conference, stating that baby carrots – when eaten at least three times a week for breakfast – may help increase skin carotenoid levels in young adults. High skin carotenoid levels may help enhance antioxidant defenses and reduce the risk of chronic diseases. Skin carotenoid levels – when high – may also help boost the body’s overall immune system.

Mary Harper Simmons, a master’s student in nutritional sciences at Samford University and lead author of the study, said in a media release that previous studies have suggested consuming the recommended amount of fruits and vegetables every day for good skin. However, the recent study shows that a small change in diet – including baby carrots – can help effectively improve skin health.

Why are carotenoids necessary?
Carotenoids are responsible for the bright red, orange and yellow colors in fruits and vegetables. In the skin, carotenoids can be measured to assess daily consumption of fruits and vegetables. The study showed that people who regularly ate baby carrots increased their skin carotenoid levels by 10 percent. Those who consumed baby carrots and a multivitamin daily saw a dramatic increase in their skin carotenoid levels by 21 percent.

The study further states that consuming a multivitamin containing beta-carotene may not help increase skin carotenoid levels – other plant nutrients present in baby carrots may effectively improve skin health.
