Ingredients to create brinjal filling:

Big brinjal, 1 finely chopped onion, 3 finely chopped green chillies, 2 bud chopped garlic, 1 tomato, 1 tsp red chili powder, 1 tsp garam masala, 1 tablespoon chopped coriander leaves, mustard oil, salt as per taste

How to make brinjal filling?

First step: First of all wash the brinjal with clean water and cut it in length. Now turn on the gas and place a pan on it and add 2 teaspoons of mustard oil to it. Then add chopped eggplants and tomatoes and cover it. Keep gas flame medium. Turn off the gas when tomatoes and brinjal are roasted.

Second step: Fine onion, coriander, garlic and chili finely chop. When the brinjal is cooked well, take it out of the pan and keep it in a plate.

Third step: Now mash the cooked eggplants and tomatoes well in a bowl. Then add finely chopped onion, garlic, green chillies and 1 tsp red chili powder and mix well. Now add half a teaspoon of mustard oil and salt as per taste. Garnish with coriander on filling. Take, your delicious brinjal filling is ready. Eat yourself and feed everyone else.
