But do you know that not every makhana available in the market is the same? It has total 9 types of qualities. And the price of each quality depends on its size and grade.
The process of determining the quality of Makhana starts with removing its seeds (gudi) from water. Makhana producer Ramesh Sahni says that after taking out the dolls, they are passed through 9 different sized sieves (jaalis). In this process the dolls automatically separate according to their size. After this, Makhana lava is prepared from these different sized dolls, which are given different grades.
Quality is measured in ‘yarn’
In the market, Makhana is graded on the basis of number or ‘yarn’. This grading ranges from one yarn to nine yarns.
Best Quality: Makhana of 6 or 6.5 yarn is considered to be of best quality, which is also called ‘Rasgulla Makhana’. These are the largest in size, completely round, white and light.
Low Quality: The smallest size or seeds that do not germinate properly are the lowest grade. These are often used in making kheer or flour.
Big and attractive Makhana tops the grade
The Makhana which is at the top in grade is larger in size and attractive to look at. For this reason its price is also the highest. The best quality Rasgulla Makhana can be sold in the market for Rs 1200 to Rs 1300 per kg. So, next time you buy makhana, don’t go by the price alone. Pay attention to its quality, size and grade so that you can bring home the right and nutritious Makhana as per your need.
